Blueberry Muffins
I lost my favorite blue berry muffin recipe. But then I remembered I posted it online. Here it is again :)
Blueberry Muffins
2 1/2 c all-purpose flour
1 c sugar
1 c buttermilk (or milk minus 1 T, plus 1 T vinegar)
1/4 pound butter (I used 1/2 c)
2 1/2 tsp baking powder
1/4 tsp salt
2 eggs, beaten
1 1/2 c fresh or frozen blueberries, rinsed and drained.
Sift ingredients together in a large bowl. Make a well, add buttermilk, eggs and butter which has been melted and browned slightly. Mix well. Fold in blueberries. Fill well-greased muffin tins half full and bake at 400 F for 20 minutes. Serve warm. Yields about 18 muffins.
